Beet n' blueberry smoothie (+ coconut whipped cream)

Look at that color ! When you see color, you see nutrients. This beet n' blueberry smoothie is delicious, fresh and filled with proteins (hemp!).  It is also loaded with fibers, antioxydants and is a great booster for the immune system, since the main ingredients are kale, blueberries and beets. The fresh mint really helps to balance the "earthy taste" of the beets and kale and is so refreshing.  Don't be afraid to use frozen blueberries in drinks if they aren't in season. Serve this smoothie with vegan coconut whipped cream (see tutorial here) and I promise you'll be delighted !

Beet n' blueberry smoothie 

Yield : 2-4 servings (depending on your glasses) 

Ingredients

2 cup frozen or fresh blueberries

1 medium beet, steamed, roasted, or raw (if you don’t have a high speed blender, use steamed or roasted) - see note

1 cup green leaves (kale, spinach or swiss chard) 

4 mint leaves

2 cups pomegranate juice 

2 tablespoons maple syrup (or honey or agave nectar) 

2 tablespoons hemp seeds 

Juice of 1 lemon 

1 can refrigerated full-fat coconut milk (for the whipped cream) - optional 


Blend all ingredients together until smooth. 

Serve with coconut whipped cream and bee pollen for a even more decadent smoothie! Enjoy ! 

 

Note : If you have a juicer, you could use the beet juice for a smoother texture (the complete raw beet gives a "grainy" texture that you might have to get use to).
