Vegan sour cream
Recipe from Thrive energy cookbook
1 cup soaked cashews (at least 2 hours), drained
1/2 cup water
1 teaspoon apple cider vinegar
2 teaspoons lemon juice
Salt and pepper to taste
- Soak cashews in a bowl (be sure to cover with water) for at least 2 hours or more. Drain and rinse.
- Place in the blender with all the other ingredients and blend on high until smooth.
